Who’s ready for summer and all things light, bright, and refreshing???
Oh, me me!
Okay, so it’s still Spring around here, but I’m already gearing up and switching my smoothie routine to a lighter version of one of my go-to smoothies, Berry Ginger!
It doesn’t matter what time of year it is, or what type of smoothie, I’ll drink em’ all (as long as they’re dairy free, of course). In the winter I usually crave heartier smoothies made with coconut or almond milk, but when summer rolls around, I’ll all for light and bright.
Like with this Berry Ginger version!
Replacing the coconut milk for simple filtered water makes this smoothie SO refreshing and is perfect for when the weather gets warm and you want something a little lighter. A little sugar from apple juice rounds out the flavors from the berries and greens, and the fresh ginger adds that spicy kick I’m always craving. As in, have to have ginger every day kind of craving.
I. Cannot. Have. Enough. Ginger.

- 1 cup frozen blueberries
- 1 cup frozen strawberries
- 2 handfuls of greens (spinach/kale/chard)
- 1 tablespoon minced or grated fresh ginger
- 1½ cups filtered water
- ½ cup unpasteurized apple cider (sub orange juice or other juice of choice)
- Optional: 1-2 tablespoons honey or agave nectar (or sweetener of choice)
- Place 1 cup frozen blueberries, 1 cup frozen strawberries, 2 handfuls of greens, 1 tablespoon minced or grated fresh ginger, 1 ½ cups filtered water, ½ cup unpasteurized apple cider (or juice of choice), and 1-2 tablespoons honey or agave nectar (if using) into a blender.
- Blend on high until fully mixed, about 1 minute.
- Pour into 2 large glasses.
- Enjoy!
