There’s this little restaurant in Chicago called Glen’s Diner that serves one of the best pork chops that I have ever tasted. And believe me, that’s no small feat considering pork (pretty much in any form – chops, shanks, shoulders) is my FAVORITE meat. By a landslide. Give me a pork shank and I am one happy girl.
And this chop from Glen’s makes the grade. I mean, a chop slathered in caramelized onions, apples, and bacon?
Drool worthy!
This chop was so good that I knew I needed to recreate it at home ASAP, especially considering it’s now officially Fall. After a few trials, I absolutely nailed it. And honestly, it couldn’t be easier to make!
In one pan you throw together the apple onion mixture and let it reduce, and in another you sear off some chops. In under an hour you are eating one amazing Fall inspired meal!
Just look at that caramelized goodness!
If you’ve never had apples and pork together, you are missing out. The two go together like peanut butter and jelly, or chocolate and peanut butter. One is just always better with the other! We would often have pork chops and applesauce when I was growing up, so it’s a natural combo I’ve eaten for years. And that little hint of cinnamon is just enough to add a warm comforting note that takes this dish to a whole new level.
It’s the ultimate savory + sweet dish!
I’m pretty sure I get my love of all things pork from my Mom. I have countless pork roasts, slow cooked chops, and braised pork shoulders that she’s made over the years to thank for this deep love.
So this recipe really goes out to you, Mom! I know you of all people fully appreciate a good pork recipe, and this one you’ll want to keep around for a long, long time. Love you!
This recipe is meant for 2, but you can always scale it up or down depending on how many people you want to feed. I’m always making dishes that feed just Kyle and myself, but it’s just as easy to double the recipe if you want to feed a larger group!
I’ve already made this recipe 3 times this Fall and plan to make it at least twice more. Dress it down as a weeknight go-to, or up as a truly easy showstopper for your next get together! Either way, you can’t go wrong with a good chop. That’s my motto!

- 2 thick cut bone-in pork chops
- 1 medium sized gala/honeycrisp/pink lady apple, peeled & thinly sliced
- ½ small sweet onion, thinly sliced
- 2 slices bacon
- 2 tablespoons maple syrup
- 1 cup water
- 1 tablespoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ tsp cinnamon
- Preheat oven to 350 degrees.
- Heat medium size skillet over medium heat. Add bacon and cook until crisp, ~5-7 minutes. Remove from pan and set aside.
- Peel apple and slice into thin ¼ inch slices. Then slice onion into ¼ inch slices and add both the apples and onion to the pan the bacon was cooking in. Add 1 cup of water, ¼ teaspoon cinnamon, ¼ teaspoon salt, and 2 tablespoons maple syrup. Reduce until most of the water has evaporated and a syrupy sauce forms; 5-10 minutes. Crumble bacon and stir into the caramelized apples and onions once they have reduced.
- While the apples are cooking, prepare the pork chops by heating a medium sized skillet over medium/high heat with 1 tablespoon of olive oil. Salt and pepper both sides of the pork chops, and add to pan. Sear on both sides until golden brown (~5 min per side).
- Transfer chops to a medium sized baking dish and put into preheated oven. Bake 15 minutes or until a thermometer reads 135 degrees in the thickest part of the chop.
- Remove and let rest 5-10 minutes.
- While the chops are resting, if needed, reheat the apple and onion mixture over low to medium heat.
- Serve by spooning caramelized apples and onions over each chop, and any cooking liquid from the baking dish the chops were in.
