Okay, so i’m a little late to the juicing party, but better late than never right?
Now, before you think I’ve gone totally juice cleansing crazy, let me explain. While I was desperately searching for answers to my health, I stumbled upon an article toting a green juice recipe that “cures” migraines.
Did I think it would cure me? No! But I was in serious pain and needed any shred of hope to cling on to. So I pushed my skeptics aside and dove in head first. I immediately went to the store and bought a juicer, thinking this was the only way I would be able to juice daily. Boy was I wrong! The juicer I bought worked for oh, about 2 weeks maybe, before it got clogged (even with me cleaning it everyday!).
But that didn’t stop me. I had experimented with juicing a few times using the blender/cheesecloth method, so I went back to it.
Even though it might seem like more work pressing the juice out with your hands, believe me, it’s SO worth it. You get a significant amount more than if you used a juicer!
Green juice, it turns out, is surprisingly delicious! I had my doubts, but it’s fresh, slightly spicy, and perfectly sweet! The apple gives it just enough natural sugar, while the ginger gives it that zinggg that I love. Have I told you how in love I am with ginger? Pickled ginger never stands a chance around me, I go through a box of ginger tea almost weekly, and I find any excuse to add ginger to anything I’m making.
See? It’s a problem. At least I admit it, right?
Back to this juice! Beyond being super tasty, it packs a serious health punch:
- Kale brings calcium, iron, copper, manganese, phosphorus, potassium and vitamins A and C.
- Ginger is anti inflammatory
- Apples provide natural sugar and antioxidants
- Celery adds natural sodium for a healthy dose of electrolytes
- And cucumber is anti inflammatory and seriously hydrating!
I’ve become a daily green juicer over the past couple of months and here’s a major BONUS: it’s seriously helped to curb sugar cravings throughout the day! That’s part of the brilliance of juicing – you get a hefty dose of nutrients that are immediately absorbed so sugar cravings are curbed throughout the day! Who can say no to that?
You’ll get the most nutrients if you drink it immediately, but it can last for up to 1-2 days in the fridge. I usually make it the night before so I have it ready to go in the morning!
Not only is this juice delicious, it really couldn’t be more simple. Blend everything together and strain/press through cheesecloth. That’s it! You’ll be on your way to a healthy day in less than 15 minutes!

- 2 kale leaves (or sub chard)
- 1 apple, cored (I like Gala or Fuji) (skin on)
- 1 stalk of celery
- ½ of a cucumber if large, 1 whole if small (skin on)
- 1 knuckle size piece of fresh ginger, peeled
- ½ cup cold water
- Optional: ½ lemon, juiced
- Wash and roughly chop kale, apple, celery, cucumber, and ginger. Add to blender. Pour in ½ cup cold water.
- Blend for 30 seconds to 1 minute, or until everything is incorporated and no big pieces remain. Add ¼ cup more water if having trouble blending.
- Place strainer over a bowl. If using cheesecloth, lay it over the strainer. A thin dishtowel would work if you don't have cheesecloth.
- Pour everything in the blender over the cheesecloth/strainer. Grab the cheesecloth from each corner and press juice until no liquid remains.
- Discard pulp. If adding lemon juice, add it now.
- Pour juice into a glass and enjoy!
