If you’re like me, you have always considered a tomato to be a vegetable. Even though it’s technically a fruit, I have a hard time putting it in the fruit family. To me, tomatoes have always tasted more more savory than sweet, and therefore fall naturally into the vegetable realm. Or so I thought.
That all changed when I was at the farmers market this past weekend. The tomatoes and peaches were both at their peak and my mind immediately had the urge to put them together.
After my first bite, I knew this was probably one of the best things I’ve ever tasted. And you might be thinking wow, Janel, it’s just some toasted bread with peaches and tomatoes.
But ohhh no, this is so, so much more. The peaches and balsamic take the tomato to it’s natural fruit state. Yes, you heard me right, I said fruit. This is the first time that a tomato has tasted like a fruit to me!
Needless to say, I was pretty excited.
You know how I tell when a dish is truly delicious? I always make sure to have a couple people taste test it for me, and then watch their reaction as they take the first couple of bites. Watching people try the food you make can be so very telling.
What’s interesting is that the best reactions come with silence. There’s no better compliment in the world than having people so satisfied with your food that they don’t say a word.
That’s exactly what happened when I made this for my boyfriend and his mom, they both sat in silence for the first couple of bites and that’s when I knew it was a great dish.
In true bruschetta fashion, basil is a necessary addition to this dish. It complements the flavors so well, and adds an unmistaken summery note. I only added 1-2 tablespoons, as I didn’t want to overpower the other flavors going on.
This bruschetta just screams summer. You can even make it ahead of time (~6 hours), but be sure to keep the topping and crostinis separate until you’re ready to serve. There will be lots of great juice from the tomatoes and peaches, so I would highly suggest spooning a little over each.
What’s so great about this recipe is that you can scale it up or down depending on how many people you want it to serve. So it would be perfect for any get togethers you’re having/going to in August, especially Labor Day!

Peach and the Cobbler
- ½ rustic baguette
- 1 medium sized tomato, diced
- 1 medium sized peach, peeled and diced
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 1-2 tablespoons basil, chiffonade
- ¼ teaspoon salt
- ¼ teaspoon pepper
- Blanch the peach by filling a medium size saucepan with water and bring to a boil. Once boiling, reduce heat to medium/high and blanch for ~1 min. Remove with a slotted spoon and let cool for ~5 minutes, or until cool enough to handle.
- Peel the peach, remove pit, and dice into bite size pieces or ~ ½ inch and place in a medium size mixing bowl.
- Dice the tomato and add on top of the diced peaches. Then add 1 tablespoon balsamic vinegar, 1 tablespoon olive oil, ¼ teaspoon salt, and ¼ teaspoon pepper. Mix.
- Chiffonade basil and add to peach and tomato mixture. Mix once more and set aside.
- Slice baguette on the diagonal into ~½ inch slices. Heat medium size pan over medium heat.
- Toast bread by drizzling olive oil on both sides of bread and add to pan. Toast on each side for 3-4 minutes or until golden brown. Sprinkle each with a pinch of salt.
- Spoon a couple tablespoons of the tomato peach mixture on each slice of toast. Spoon a little of the remaining liquid over the toast pieces.
- Eat immediately and enjoy!
