Today we’re going to talk about snacks! The bestest most amazing thing in the world, if you ask me. There are those who would argue that eating between meals is unhealthy. Others would say that eating 5-6 small meals a day is the way to go. I fall more in the latter group, +/- a few actual bigger meals as well.
What can I say? I have a healthy appetite.
Speaking of snacks, I saw this quote online this week that said “how do I stop eating chips and salsa? Do they run out…or do I die….or what”? That’s prettyy much how I feel about snacks. Especially chips + salsa. Oh and these Vegan No Bake Brownie Bites!
I mean, come on. Bite sized pieces of chocolatey goodness? Count. Me. In.
Ok, you caught me. I actually used carob powder in these bites because I’m trying to avoid the caffeine in chocolate. But carob tastes so similar that I honestly could barely tell a difference! Have you ever tried carob? It’s flavor is reminiscent of chocolate, with slightly earthy undertones.
I feel like I’m describing a fine wine over here!
These couldn’t be more simple to make. Throw everything into a bowl, mix, and roll into balls! They don’t require any chill time in the fridge so you can have these together in minutes.

- 1 cup gluten free rolled oats
- 1 cup gluten free oat flour
- 2 tablespoons flax meal or seeds (optional)
- 2 tablespoons carob powder (sub cocoa powder)
- ¼ cup carob chips or dairy free dark chocolate chips (optional)
- ⅓ cup sunflower seed butter (or nut butter of choice)
- 2 tablespoons apple juice syrup (sub agave nectar or honey if not vegan)
- ¼ cup, + 2 tablespoons filtered water
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- Combine 1 cup gluten free oats, 1 cup gluten free oat flour, 2 tablespoons flax meal or seeds (if using), 2 tablespoons carob powder (sub cocoa powder), and ¼ cup carob or dairy free dark chocolate chips (if using) in a large mixing bowl. Mix until combined.
- Add ⅓ cup sunflower seed butter (or nut butter of choice), 2 tablespoons apple juice syrup (sub agave nectar or honey if not vegan), ¼ cup + 2 tablespoons filtered water, ¼ teaspoon salt, and 1 teaspoon vanilla extract.
- Mix until combined.
- Roll into 13-16 bite size balls, slightly smaller than a golf ball.

• If you don’t have gluten free oat flour, you can make your own by grinding the oats in a blender or food processor.
